Elevate your meal with Mama DePandi’s Italian Chopped Salad, a vibrant symphony of fresh ingredients and bold flavors. Drizzled with a homemade Italian vinaigrette featuring Mama DePandi’s Olive Oil, it’s a salad that truly satisfies. Perfect as a hearty side or a light, flavorful main course.

Ingredients:

  • ½ Mama DePandi Calabrese Salami, diced into bite-sized pieces
  • ½ Mama DePandi Soppressata Salami, diced into bite-sized pieces
  • 1 head Romaine lettuce, chopped
  • ½ head Iceberg lettuce, chopped
  • 1 cup Cherry or grape tomatoes, halved
  • ½ Red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup Pepperoncini peppers, sliced
  • ½ cup Marinated artichoke hearts, quartered (drain excess marinade)
  • ¼ cup Fresh parsley, chopped
  • 2 tablespoons Fresh basil leaves, thinly sliced
  • ¼ cup Grated Parmesan cheese (freshly grated is best!)

For the Italian Vinaigrette:

  • ¼ cup Mama DePandi Italian Extra Virgin Olive Oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove Garlic, minced
  • 1 teaspoon Dried oregano
  • ½ teaspoon Dried basil
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Step 1

Prepare the Vegetables

Wash and thoroughly dry all of your lettuce. Chop the Romaine and Iceberg into bite-sized pieces and place them in a large salad bowl. Add the tomatoes, red onion, olives, pepperoncini, artichoke hearts, parsley, and basil to the bowl with the lettuce. Sprinkle the diced Mama DePandi salami over the top.

Step 2

Make the Vinaigrette

In a small bowl or jar, whisk together the Mama DePandi Italian Extra Virgin Olive Oil, red wine vinegar, Dijon mustard, minced garlic, oregano, basil, and red pepper flakes (if using). Season generously with salt and freshly ground black pepper to your liking.

Step 3

Dress and Toss

Just before serving, pour the Italian vinaigrette over the salad. Toss everything gently but thoroughly to ensure all the ingredients are well coated.

Step 4

Garnish and Serve

Sprinkle the grated Parmesan cheese over the salad. Serve and enjoy!
